Ingredients
1 pound ground beef
1 small onion, finely diced
2 garlic cloves, minced
1 (1 oz) packet taco seasoning (or homemade)
1 (14.5 oz) can diced tomatoes (with juices)
2 cups beef broth (or chicken broth)
1/2 cup salsa (mild, medium, or spicy depending on preference)
2 cups uncooked pasta (shells, penne, or elbow macaroni)
1 cup shredded cheddar cheese (or a Mexican cheese blend)
1/4 cup sour cream (optional, for creaminess)

Instructions
Step 1: Cook the Beef
Heat a large skillet or Dutch oven over medium heat.
Add the ground beef and cook until browned, breaking it apart with a spoon.
Stir in the onion and garlic, cooking for another 3–5 minutes until softened.
Step 2: Add Seasonings and Liquids
Sprinkle the taco seasoning over the beef mixture and stir until well coated.
Add the diced tomatoes, beef broth, salsa, and pasta to the skillet. Stir to combine.
Step 3: Simmer the Pasta
Bring the mixture to a boil, then reduce the heat to low.
Cover and simmer for 12–15 minutes, or until the pasta is cooked and most of the liquid is absorbed. Stir occasionally to prevent sticking.
Step 4: Make It Cheesy
Remove the skillet from heat and stir in the shredded cheese until melted and creamy.
For an extra creamy texture, mix in the sour cream.
