Ingredients

  • 1 lb ground chicken, turkey, or beef
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan
  • 1 egg
  • 2 garlic cloves, minced
  • 2 tbsp parsley, chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 12 oz linguine
  • 4 tbsp butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan
  • Salt & pepper
  • Fresh parsley for garnish

Instructions

  1. Cook the linguine in salted water until it reaches al dente. Reserve 1 cup of the pasta water, then drain the linguine.
  2. In a bowl, combine the ground chicken, breadcrumbs, grated Parmesan, egg, minced garlic, chopped parsley, salt, and black pepper. Mix well and form the mixture into small meatballs.
  3. Heat the olive oil in a skillet over medium heat. Add the meatballs and cook until they are golden brown and cooked through. Once done, set them aside.
  4. In the same skillet, melt the butter. Add the minced garlic and sauté until fragrant. Then stir in the heavy cream and chicken broth, whisking until the mixture is smooth.
  5. Gradually add the grated Parmesan to the skillet, whisking continuously until the sauce becomes creamy.
  6. Toss the cooked linguine in the creamy sauce, adding reserved pasta water as needed to achieve the desired consistency.
  7. Place the cooked meatballs on top of the linguine. Garnish with fresh parsley and additional grated Parmesan before serving.
