Description

This Club Sandwich Pasta Salad combines all the crunchy, creamy, and savory flavors of a classic club sandwich into a delicious cold pasta salad. Perfect for potlucks, BBQs, or a quick and easy lunch!

For the Salad:

  • 12 oz pasta (rotini, bowtie, or penne)
  • 1 ½ cups cooked chicken breast, diced
  • 1 cup cooked turkey bacon, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup diced red onion

For the Dressing:

  • ½ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika

For Garnish (Optional):

  • 1 tbsp fresh parsley, chopped

Instructions

1️⃣ Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Cook pasta until al dente, according to package instructions.
  • Drain and rinse under cold water to cool completely.

2️⃣ Assemble the Salad:

  • In a large mixing bowl, combine cooled pasta, diced chicken, crumbled turkey bacon, cherry tomatoes, shredded lettuce, shredded cheddar cheese, and diced red onion.

3️⃣ Make the Dressing:

  • In a small bowl, whisk together mayonnaise, sour cream (or Greek yogurt), Dijon mustard, lemon juice, garlic powder, salt, black pepper, and paprika until smooth.

4️⃣ Mix Everything Together:

  • Pour the dressing over the pasta mixture and toss until everything is evenly coated.

5️⃣ Chill & Marinate:

  • Cover and refrigerate for at least 30 minutes to let the flavors meld.
