Description

This flavorful creamy chicken pasta delight is a crowd-pleaser that’s easy to prepare. Made with olive oil, 1 onion (chopped), and 3 cloves garlic (minced), it’s perfect for a weeknight dinner or special occasion.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 3½ cups milk
  • 10.5 ounces can cream of chicken soup
  • 8 ounces cream cheese (softened)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pound uncooked spaghetti
  • 1 cup grated mozzarella cheese
  • 1 cup grated cheddar cheese
  • ¾ cup cooked and crumbled chicken
  • 2 tablespoons fresh parsley

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the spaghetti al dente according to the package directions. Rinse and drain it under cold water.
  3. In a large pot over medium-high heat, add the olive oil; once the oil is hot, add the onion and cook until it has softened. Then, add the garlic and continue cooking for 1 minute or until the garlic becomes fragrant.
  4. Reduce the heat, then add the milk, cream cheese, cream of chicken soup, and spices. Cook until the cream cheese has completely melted.
  5. Toss the spaghetti in the sauce to coat it evenly and then transfer it to a baking dish.
  6. Top the pasta with the grated cheeses and cooked chicken.
  7. Cover the dish with aluminum foil and place it in the oven. Bake for 20 minutes.

Remove the foil and continue baking for an additional 10 minutes. For the last 5 minutes, place it under the broiler, checking closely to prevent burning.
