Walking Taco Casserole is a fun, easy-to-make twist on a classic taco night. Perfect for busy weeknights or casual gatherings, this hearty dish combines seasoned ground beef, creamy cheese, crunchy corn chips, and fresh toppings all in one pan. It’s a crowd-pleaser that’s packed with bold flavors and satisfying textures.


Ingredients

1 ½ lbs ground beef
1 cup onion, chopped
3 oz cream cheese
1 packet taco seasoning
1 can green chilis
23 cups Fritos corn chips
1 cup shredded taco blend cheese
1 Roma tomato, chopped
12 cups shredded lettuce
Salsa and sour cream for garnish


Instructions

Preheat oven to 350°F.
Cook the ground beef and chopped onion in an oven-safe skillet over medium-high heat until the beef is browned and the onions have softened.
Add the taco seasoning, green chilis, and cream cheese to the skillet. Stir and sauté until the cream cheese is fully melted and the mixture is well combined.
Spread the corn chips evenly over the beef mixture, then top with shredded taco blend cheese.
Place the skillet in the oven and bake for 20 minutes, or until the cheese is melted and bubbly.
Remove the skillet from the oven. Top the casserole with shredded lettuce and chopped Roma tomato.
Serve immediately, garnished with salsa and sour cream as desired.

Notes

For a spicier version, consider using hot green chilis or adding a dash of cayenne pepper to the beef mixture. If you prefer, you can substitute ground turkey or chicken for the beef. This dish is best enjoyed fresh but can be reheated in the oven to maintain the crispness of the chips.
