Ingredients
For the Mushrooms:
- 1 lb mushrooms (button, cremini, or oyster), cleaned and stems trimmed
- 1 cup buttermilk
- 1 tsp garlic powder
- ½ tsp paprika
- 1 cup all-purpose flour
- ½ cup cornstarch (for extra crispiness)
- 1 tsp salt
- ½ tsp black pepper
- 1½ cups panko breadcrumbs (for extra crunch)
- Vegetable oil (for frying)
For the Cool Ranch Dip:
- ½ cup sour cream
- ½ cup mayonnaise
- 1 tbsp ranch seasoning mix
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tbsp fresh lemon juice
- 1 tbsp fresh chives or parsley, chopped (for garnish)
Instructions
1️⃣ Prepare the Mushrooms:
In a bowl, toss the mushrooms with buttermilk, garlic powder, and paprika. Let them soak for 15-20 minutes to absorb flavor.
2️⃣ Set Up Breading Stations:
- In one bowl, mix flour, cornstarch, salt, and black pepper.
- In a second bowl, place panko breadcrumbs.
3️⃣ Coat the Mushrooms:
Remove mushrooms from the buttermilk (let excess drip off), dredge in the flour mixture, then coat with panko breadcrumbs. Press gently to help the coating stick.
4️⃣ Heat the Oil:
In a deep pan, heat 2-3 inches of vegetable oil to 350°F (175°C).
5️⃣ Fry Until Golden:
Fry mushrooms in batches for 3-4 minutes, until crispy and golden brown. Remove and drain on a paper towel-lined plate.
6️⃣ Make the Cool Ranch Dip:
In a bowl, mix sour cream, mayonnaise, ranch seasoning, garlic powder, onion powder, and lemon juice. Stir well and chill for 10 minutes before serving.
7️⃣ Serve & Enjoy:
Sprinkle the mushrooms with chopped chives or parsley and serve hot with the cool ranch dip!
