For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
For the Filling:
- 1 cup fresh spinach, chopped
- ½ cup roasted red peppers, sliced
- 1 cup shredded mozzarella cheese
For Cooking:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- ½ teaspoon red pepper flakes (optional, for spice)
For Garnish:
- 1 tablespoon fresh parsley, chopped
Instructions
1️⃣ Preheat the Oven:
- Preheat to 375°F (190°C).
- Lightly grease a baking dish or line with parchment paper.
2️⃣ Prepare the Chicken:
- Place chicken breasts on a cutting board.
- Slice a pocket into the side of each, being careful not to cut all the way through.
- Season both sides with salt, black pepper, Italian seasoning, garlic powder, and smoked paprika.
3️⃣ Stuff the Chicken:
- Inside each chicken pocket, layer chopped spinach, roasted red peppers, and mozzarella cheese.
- Secure with toothpicks if needed.
4️⃣ Sear the Chicken:
- Heat olive oil and butter in a large oven-safe skillet over medium heat.
- Add minced garlic and red pepper flakes and sauté for 30 seconds.
- Sear the stuffed chicken for 2-3 minutes per side, until golden brown.
5️⃣ Bake:
- Transfer the skillet to the oven and bake for 18-22 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
6️⃣ Serve & Enjoy!
- Remove toothpicks (if used) and let the chicken rest for 5 minutes.
- Garnish with fresh parsley and serve warm.
