For the Filling:

  • 1 cup fresh spinach, chopped
  • ½ cup roasted red peppers, sliced
  • 1 cup shredded mozzarella cheese

For Cooking:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional, for spice)

For Garnish:

  • 1 tablespoon fresh parsley, chopped

Instructions

1️⃣ Preheat the Oven:

  • Preheat to 375°F (190°C).
  • Lightly grease a baking dish or line with parchment paper.

2️⃣ Prepare the Chicken:

  • Place chicken breasts on a cutting board.
  • Slice a pocket into the side of each, being careful not to cut all the way through.
  • Season both sides with salt, black pepper, Italian seasoning, garlic powder, and smoked paprika.

3️⃣ Stuff the Chicken:

  • Inside each chicken pocket, layer chopped spinach, roasted red peppers, and mozzarella cheese.
  • Secure with toothpicks if needed.

4️⃣ Sear the Chicken:

  • Heat olive oil and butter in a large oven-safe skillet over medium heat.
  • Add minced garlic and red pepper flakes and sauté for 30 seconds.
  • Sear the stuffed chicken for 2-3 minutes per side, until golden brown.

5️⃣ Bake:

  • Transfer the skillet to the oven and bake for 18-22 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
