This comforting and flavorful casserole is the ultimate set-it-and-forget-it dinner. Tender chicken bakes on a bed of creamy, seasoned rice, all topped with savory onion soup mix. True to its name, no peeking is allowed while it bakes to ensure perfect results!

  • 1 lb boneless, skinless chicken breasts
  • 2 cups Minute Rice (brown or white)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can water (use an empty soup can for measurement)
  • 1 tablespoon butter (for greasing)
  • 1 envelope Lipton Onion Soup mix

Instructions

1️⃣ Preheat the oven:
Set your oven to 350°F (175°C).

2️⃣ Prepare the baking dish:
Use the tablespoon of butter to grease a 9×13-inch baking pan thoroughly.

3️⃣ Mix the rice base:
In a medium mixing bowl, combine the Minute Rice, cream of chicken soup, cream of mushroom soup, and water. Stir until well blended.

4️⃣ Assemble the casserole:
Pour the rice mixture evenly into the prepared baking pan. Place the chicken breasts on top of the rice mixture, arranging them in a single layer.

5️⃣ Add the seasoning:
Sprinkle the envelope of Lipton Onion Soup mix evenly over the chicken breasts, ensuring even coverage for maximum flavor.

6️⃣ Cover and bake:
Cover the pan tightly with aluminum foil to trap in the steam, which helps cook the rice and chicken perfectly. Place the casserole in the preheated oven and bake for 1 to 1.5 hours, or until the chicken is fully cooked (internal temperature of 165°F or 74°C) and the rice is tender.

7️⃣ Serve hot:
Remove the casserole from the oven and let it rest for 5 minutes before serving. Dish up the chicken with generous scoops of the creamy rice mixture for a hearty and satisfying meal.

Notes

  • For added flavor, season the chicken with salt, pepper, or paprika before placing it on the rice.
  • You can use bone-in chicken thighs instead of breasts, but adjust the cooking time as needed.
