Oven Fried Potatoes & Onions is a simple yet flavorful dish that brings out the natural sweetness of onions and the crispy texture of golden potatoes. 4 large russet potatoes, peeled and cut into wedges
1 large onion, sliced into rings
3 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
Fresh parsley (optional, for garnish)


Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the potatoes and onions: Peel and cut the potatoes into wedges, then slice the onion into rings. Place them in a large mixing bowl.

Season the potatoes and onions: Drizzle the olive oil over the potatoes and onions. Sprinkle with garlic powder, paprika, salt, and pepper. Toss everything together until evenly coated.

Arrange on the baking sheet: Spread the seasoned potatoes and onions in a single layer on the prepared baking sheet, making sure they are not overlapping too much.

Bake: Roast in the preheated oven for 30-40 minutes, flipping the potatoes halfway through. Bake until the potatoes are golden brown and crispy on the outside, and tender on the inside.

Serve: Once the potatoes are crispy and the onions have caramelized slightly, remove from the oven. Garnish with fresh parsley, if desired, and serve hot.

Notes

For an extra kick, you can sprinkle some red pepper flakes or cayenne pepper over the potatoes before baking. If you prefer a different texture, you can parboil the potatoes for a few minutes before roasting to ensure they are extra crispy.
