Ingredients
✔ 1 lb Italian sausage (mild or spicy)
✔ 8 oz pasta (penne, rigatoni, or your favorite)
✔ 2 tbsp olive oil
✔ 1 small onion, diced
✔ 3 cloves garlic, minced
✔ 1 cup heavy cream
✔ 1 cup chicken broth
✔ 1 tsp Italian seasoning
✔ ½ tsp salt
✔ ¼ tsp black pepper
✔ 1 cup fresh spinach, roughly chopped
✔ ½ cup sun-dried tomatoes, chopped
✔ ¼ cup grated Parmesan cheese
Instructions
1️⃣ Cook the pasta:
- Boil pasta according to package instructions until al dente. Drain and set aside.
2️⃣ Brown the sausage:
- In a large skillet, heat olive oil over medium heat.
- Add Italian sausage and cook until browned, breaking it up as it cooks.
3️⃣ Sauté the aromatics:
- Stir in diced onion and garlic.
- Cook for 3 minutes, until softened and fragrant.
4️⃣ Make the creamy sauce:
- Stir in heavy cream, chicken broth, Italian seasoning, salt, and pepper.
- Bring to a gentle simmer.
5️⃣ Add veggies:
- Toss in sun-dried tomatoes and spinach.
- Simmer for 2 minutes, until the spinach is wilted.
6️⃣ Combine & serve:
- Add the cooked pasta to the skillet and toss until coated.
- Sprinkle with Parmesan cheese and serve immediately.
