  • Author: Andrew Recipes

Description

These Vegan Sweet Potato Brownies are a healthier yet indulgent treat that combines the natural sweetness of sweet potatoes with rich chocolate flavor. They’re fudgy, moist, and easy to make, with a perfect balance of ingredients that create a wholesome dessert. The sweet potato adds nutrients and moisture, while the almond butter gives them a creamy texture. With just a few simple ingredients, you’ll have a dessert that’s both delicious and satisfying—without the guilt!

Ingredients

Scale

For the Brownies:
1 medium sweet potato (about 1 cup mashed)
½ cup almond butter (or any nut/seed butter of choice)
½ cup maple syrup (or agave nectar for a lower glycemic option)
¼ cup unsweetened cocoa powder
¼ cup coconut oil (melted)
1 teaspoon vanilla extract
½ cup almond flour (or oat flour for gluten-free)
¼ cup dark chocolate chips (optional, for extra richness)
Pinch of salt

Optional Add-Ins:
Chopped walnuts or pecans
Dried cranberries or raisins
Cinnamon or espresso powder (for added depth)

Instructions

Preheat Your Oven
Start by preheating your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal of the brownies once baked.

Prepare the Sweet Potato
Peel and chop the sweet potato into small cubes. Steam or boil the sweet potato until it’s tender, about 10-15 minutes. Once cooked, mash the sweet potato with a fork or use a food processor to blend it into a smooth consistency. Measure out 1 cup of the mashed sweet potato for the recipe.

Mix the Wet Ingredients
In a large mixing bowl, combine the mashed sweet potato, almond butter, maple syrup, melted coconut oil, and vanilla extract. Stir everything together until smooth and well-combined.

Add the Dry Ingredients
Sift the cocoa powder and almond flour into the wet mixture to prevent any lumps. Stir gently until the batter becomes thick and uniform. If you’re using chocolate chips, nuts, dried fruit, or spices, fold them in at this stage.

Bake the Brownies
Pour the batter into the prepared baking pan, spreading it evenly with a spatula. Bake the brownies in the preheated oven for 20-25 minutes, or until the edges are set and a toothpick inserted into the center comes out mostly clean (a few crumbs are okay). Be careful not to overbake to keep the brownies fudgy.

Cool and Serve
Let the brownies cool completely in the pan before slicing. Cooling helps them firm up and makes them easier to cut. Slice into squares and enjoy these rich, decadent brownies with a healthy twist!

Notes

  • These Vegan Sweet Potato Brownies are not only a healthier option for dessert but also incredibly rich and satisfying. The combination of almond butter and sweet potato creates a wonderfully moist texture, while the cocoa powder and chocolate chips add deep chocolate flavor. They are naturally sweetened with maple syrup, making them refined sugar-free, and they are perfect for anyone following a vegan or gluten-free diet (just swap in oat flour if needed). You can also experiment with different add-ins, such as nuts for crunch or dried fruits for extra flavor. This recipe is versatile and keeps well for several days, making it great for meal prep or snacking.
