Ingredients
- 4 boneless, skinless chicken breasts
- 1 ½ cups long-grain white rice (uncooked)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup (or cream of celery)
- 1 ¾ cups chicken broth (or water)
- 1 packet (1 oz) dry onion soup mix
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional, for color)
- 1 tablespoon butter, melted (optional, for extra flavor)
Instructions
1️⃣ Preheat the oven: Set oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
2️⃣ Mix the rice and sauce: In the baking dish, whisk together uncooked rice, cream of chicken soup, cream of mushroom soup, chicken broth, garlic powder, and black pepper until well combined.
3️⃣ Add the chicken: Place the chicken breasts directly on top of the rice mixture. Sprinkle dry onion soup mix evenly over the top. (For extra color, add paprika.)
4️⃣ Cover and bake: Tightly cover the dish with aluminum foil. Bake for 1 hour and 15 minutes, without peeking!
5️⃣ Check & serve: Remove from oven and let sit for 5 minutes before uncovering. If desired, brush with melted butter before serving for extra richness.
Notes
- Make it extra creamy: Stir in ½ cup sour cream or cream cheese into the rice mixture.
- Veggie boost: Add sautéed mushrooms, peas, or diced carrots for extra texture and nutrients.
- Prefer boneless thighs? Swap chicken breasts for boneless, skinless thighs for extra juiciness.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for 10 minutes.
