This hearty, flavor-packed goulash is a comforting one-pot meal that’s perfect for busy weeknights. Packed with tender beef, fragrant spices, and pasta, it’s an easy dish to whip up while delivering big flavor.
Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup chopped tomatoes (canned or fresh)
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 cup elbow macaroni
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions
1️⃣ Sauté the Vegetables
In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sauté for about 5 minutes, until the vegetables are softened and fragrant.
2️⃣ Brown the Beef
Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until browned, about 7-10 minutes. Drain any excess fat if needed.
3️⃣ Incorporate Spices and Tomatoes
Sprinkle in the paprika, ground cumin, oregano, salt, and pepper. Stir well to coat the beef. Add the chopped tomatoes and tomato paste, mixing everything together for a rich base.
4️⃣ Simmer with Broth and Pasta
Pour in the beef broth and bring the mixture to a boil. Stir in the elbow macaroni, reduce the heat to low, and cover the pot. Let it simmer for about 15 minutes, stirring occasionally, until the pasta is tender and the flavors meld beautifully.
5️⃣ Serve
Taste and adjust seasonings if needed. Serve hot, garnished with fresh parsley or shredded cheese for an extra kick.
Notes
- For extra depth of flavor, consider adding a splash of Worcestershire sauce or a pinch of cayenne for heat.
- Feel free to substitute ground turkey or chicken for the beef for a lighter option.
- Store leftovers in an airtight container for up to 3 days; reheat gently on the stove with a splash of broth if needed.
