4 oz cream cheese, softened
1/4 cup granulated sugar
1/2 tsp vanilla extract
1 large egg white

For the Caramel Drizzle:
1/4 cup caramel sauce (store-bought or homemade)

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

  • In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg yolk and vanilla extract until fully combined. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

  • In a small mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth. Beat in the egg white until the mixture is creamy and well combined.

  • Scoop about 1 tablespoon of cookie dough per cookie onto the prepared baking sheet, spacing them about 2 inches apart. Use your thumb or the back of a spoon to create a small indentation in the center of each dough ball. Spoon about 1 teaspoon of the cheesecake filling into the indentation of each cookie.

  • Bake for 10–12 minutes, or until the edges of the cookies are lightly golden and the centers are set. Be careful not to overbake, as the cookies will firm up as they cool. Let the cookies cool completely on the baking sheet.
