Ingredients
For the Filling:
- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 1/2 cup diced pickles
- 1/2 cup diced onions
- 1/4 cup ketchup
- 2 tablespoons mustard
- Salt and pepper to taste
For the Egg Rolls:
- 12 egg roll wrappers
- Oil for frying
Instructions
1️⃣ Cook the Filling: In a skillet over medium heat, cook the ground beef until fully browned, breaking it up into small crumbles. Drain any excess fat.
2️⃣ Add Flavor: Stir in diced onions, pickles, ketchup, mustard, salt, and pepper. Cook for 5 minutes, allowing the flavors to combine.
3️⃣ Mix with Cheese: Remove the skillet from heat and let the mixture cool slightly. Stir in shredded cheddar cheese until melted and incorporated.
4️⃣ Prepare Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the cheeseburger filling in the center.
5️⃣ Wrap the Roll: Fold the bottom corner over the filling. Fold in the sides, then roll tightly to form a sealed egg roll. Brush the top corner with a little water to secure it.
6️⃣ Repeat the Process: Continue filling and wrapping until all egg rolls are prepared.
7️⃣ Fry to Perfection: Heat oil in a large skillet to 350°F (175°C). Fry the egg rolls in small batches, turning occasionally, until golden brown, about 3-4 minutes per batch.
8️⃣ Drain and Serve: Remove the egg rolls and place them on a plate lined with paper towels to drain. Serve hot with your favorite dipping sauce.
Notes
- Make Ahead: You can prepare the filling and roll the egg rolls ahead of time. Store them uncooked in the refrigerator for up to a day or freeze for longer storage.
- Baking Option: For a lighter version, brush the egg rolls with oil and bake at 400°F (200°C) for 15-20 minutes, flipping halfway through.
- Dipping Suggestions: Ranch dressing, BBQ sauce, or even a mix of mayo and Sriracha make excellent pairings.
