Ingredients
For the Chicken Bites:
- 1 lb ground chicken
- ½ cup smoked chicken ham, finely chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ½ tsp dried thyme
- Salt and black pepper, to taste
- 1 tbsp Dijon mustard
- 2 large eggs
- ¾ cup Panko bread crumbs
- 8 oz Swiss cheese, cut into ½-inch cubes
- Cooking spray
- (Optional for coating) Extra Panko bread crumbs
Instructions
1️⃣ Prepare the Mixture: In a large bowl, combine ground chicken, smoked chicken ham, garlic powder, onion powder, smoked paprika, thyme, salt, pepper, Dijon mustard, and eggs. Mix until well incorporated.
2️⃣ Form the Bites: Gradually mix in the Panko bread crumbs until the mixture is cohesive enough to shape. Take small amounts of the mixture and form it around a cube of Swiss cheese, shaping into 2-inch balls.
3️⃣ Optional Coating: For extra crunch, roll the meatballs in additional Panko bread crumbs.
4️⃣ Preheat Air Fryer: Set your air fryer to 400°F (200°C).
5️⃣ Cook the Bites: Arrange the bites in the air fryer basket, ensuring they do not touch for even cooking. Spray generously with cooking spray.
6️⃣ Air Fry: Cook for 10-12 minutes, flipping halfway through and spraying again with cooking spray. The bites should be golden brown and cooked through.
