Ingredients
1 cup sour cream
2 chipotle peppers in adobo sauce
1 tablespoon adobo sauce from the chipotle can
2 garlic cloves, minced
1 tablespoon lime juice
½ teaspoon smoked paprika
¼ teaspoon salt
Optional: 1 tablespoon mayonnaise for extra richness
Instructions
1️⃣ In a blender or food processor, combine the sour cream, chipotle peppers, adobo sauce, minced garlic, lime juice, smoked paprika, and salt. Blend until smooth and creamy.
2️⃣ Taste and adjust seasoning if needed. For more heat, add an extra chipotle pepper or a bit more adobo sauce. For a milder version, use just one pepper and increase the sour cream slightly.
3️⃣ Transfer the sauce to a jar or airtight container and refrigerate for at least 30 minutes to allow the flavors to develop.
4️⃣ Stir before serving. Use as a drizzle, dip, or spread as desired.
Notes
This sauce keeps well in the fridge for up to 5 days and gets more flavorful over time. It’s excellent on grilled shrimp tacos, breakfast burritos, roasted potatoes, or as a dipping sauce for sweet potato fries. For a thinner consistency, whisk in a splash of milk or water. You can also use Greek yogurt in place of sour cream for a higher protein version.
