Ingredients
For the pizza:
1 prepared pizza dough (store-bought or homemade)
1 cup cooked chicken breast, shredded or chopped
¾ cup whole berry cranberry sauce
6 oz Brie cheese, sliced (rind on or off based on preference)
½ red onion, thinly sliced
1 tbsp olive oil
1 tsp fresh thyme or rosemary leaves (optional)
Salt and pepper to taste
Flour for dusting
Instructions
1️⃣ Preheat the oven to 475°F and place a pizza stone or baking sheet inside to heat.
2️⃣ On a lightly floured surface, roll out the pizza dough to your desired thickness. Transfer it to a piece of parchment paper for easy handling.
3️⃣ Brush the dough lightly with olive oil. Season with a pinch of salt and pepper.
4️⃣ Spread the cranberry sauce evenly over the dough, leaving a small border around the edges.
5️⃣ Evenly distribute the cooked chicken over the cranberry sauce. Top with sliced Brie and scatter red onion slices over the top.
6️⃣ Carefully slide the pizza (with parchment) onto the preheated stone or baking sheet. Bake for 12 to 15 minutes, or until the crust is golden and the cheese is melted and bubbly.
7️⃣ Remove from the oven and sprinkle with fresh thyme or rosemary if using. Let it cool slightly before slicing and serving.
