  • 1 lb Italian sausage, casings removed
  • 1 onion, diced
  • 2 cloves garlic, chopped
  • 1/2 tsp ground fennel (optional)
  • 1/2 tsp red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 (14.5 oz) can petite diced tomatoes
  • 8 oz pasta, such as ditalini (use gluten-free pasta if desired)
  • 1 tsp Italian seasoning
  • 1/2 cup Parmesan cheese, grated
  • 4 oz cream cheese, warmed
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

1️⃣ Cook the Sausage and Onion:

  • In a large saucepan over medium heat, cook the Italian sausage and diced onion, breaking the sausage into crumbles, until the sausage is browned and cooked through. Drain any excess grease.

2️⃣ Add Aromatics:

  • Add the chopped garlic, ground fennel, and red pepper flakes. Stir and cook for about 1 minute until fragrant.

3️⃣ Add Broth and Pasta:

  • Add the chicken broth, canned tomatoes, pasta, and Italian seasoning. Stir to combine, then bring the mixture to a boil.
  • Reduce the heat to low and let the soup simmer for 6-8 minutes, or until the pasta is cooked al dente.

4️⃣ Add Cheeses and Cream:

  • Stir in the grated Parmesan cheese, cream cheese, and heavy cream. Let the cheeses melt and incorporate into the soup, stirring occasionally, about 3-5 minutes.

5️⃣ Season and Serve:

  • Season with salt and pepper to taste. Stir in fresh parsley, if using. Ladle into bowls and enjoy!

Notes

For a richer flavor, substitute Italian sausage with spicy sausage or add extra Parmesan. This soup pairs well with crusty bread and is even better the next day as the flavors meld!
