Ingredients
For the Lasagna:
1 lb frozen cheese ravioli
1 jar (24 oz) marinara sauce
1 lb ground beef (or Italian sausage, if preferred)
1 small onion, diced
2 cloves garlic, minced
1 tsp dried basil
1 tsp dried oregano
1 ½ cups ricotta cheese
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 egg
Salt and pepper, to taste Fresh basil (optional, for garnish)
Instructions
Prepare the Meat Sauce:
Start by cooking the ground beef (or sausage) in a skillet over medium heat. Add the diced onion and minced garlic once the meat starts to brown, and cook for about 5 minutes until the onion is soft. Stir in the marinara sauce, basil, and oregano. Season with salt and pepper to taste, then let it simmer for 5 minutes. Set aside.
Prepare the Ricotta Mixture:
In a medium bowl, combine the ricotta cheese, egg, 1 cup of mozzarella, and ¼ cup of Parmesan cheese. Season with salt and pepper and mix until smooth and well combined.
Layer the Lasagna in the Crockpot:
Spray the crockpot insert with cooking spray for easy cleanup. Start by spreading a thin layer of the meat sauce on the bottom of the crockpot. Add a layer of frozen ravioli, followed by a layer of the ricotta mixture. Repeat the layering process until all ingredients are used, finishing with a layer of meat sauce on top.
Top with Cheese:
Sprinkle the remaining mozzarella and Parmesan cheese over the top of the lasagna.
Cook in the Crockpot:
Cover the crockpot and cook on low for 4-5 hours or until the ravioli is tender and the cheese is melted and bubbly. If your crockpot has a “keep warm” function, you can leave the lasagna on warm for up to 1 hour after it’s done cooking.
Garnish and Serve:
Once the lasagna is done cooking, sprinkle with fresh basil if desired. Slice and serve while hot, enjoying the layers of cheesy, saucy goodness.
Notes
Feel free to swap the ground beef for ground turkey or chicken for a lighter version of this dish.
Add in extra veggies like spinach, mushrooms, or bell peppers for more flavor and nutrients.
You can also use store-bought ricotta if you’re short on time, or make your own for an extra special touch.
If you want a crispier top, you can place the lasagna under the broiler for 3-5 minutes at the end of the cooking time (but make sure to remove the lid to avoid sogginess).
