Description

This snack hits the spot with its refreshing crunch, creamy dressing, smoky bacon, and flavorful seasoning. Perfect as a light appetizer or quick bite, these cucumber bites are easy to prepare and customizable to your taste.


Ingredients

Scale

2 cucumbers, sliced into thick rounds (about 1/4-inch thick)
1/4 cup shredded cheese (cheddar, pepper jack, or your favorite)
2 tablespoons bacon bits (or crumbled cooked bacon for extra freshness)
A pinch of black pepper

A sprinkle of Old Bay seasoning

A dash of Salad Supreme seasoning

2 tablespoons avocado lime ranch dressing (store-bought or homemade)


Instructions

Wash and dry the cucumbers thoroughly. Slice them into thick rounds about 1/4-inch thick to create sturdy bases for the toppings. Using a small spoon or melon baller, gently scoop out a shallow divot in the center of each cucumber slice to create a little “bowl.” Be careful not to scoop too deeply to keep the cucumber’s shape intact.

Drizzle or pipe a small amount of avocado lime ranch dressing into the center of each cucumber slice, or use a spoon to spread it evenly.

Sprinkle a pinch of shredded cheese over each cucumber slice. Add a few bacon bits on top of the cheese for a smoky, crunchy element. Finish with a light dusting of black pepper, Old Bay seasoning, and Salad Supreme seasoning for an extra burst of flavor.

Arrange the cucumber bites on a serving platter and serve immediately. They are best enjoyed fresh but can be prepped ahead and stored in the refrigerator for up to 2 hours before serving.

Notes

Scooping the cucumber carefully ensures it holds the toppings without becoming soggy or falling apart. Using freshly cooked bacon adds more texture and flavor but bacon bits provide convenience. The avocado lime ranch dressing adds a creamy, zesty note that complements the seasonings perfectly. These bites are a great low-carb option for gatherings or a quick snack at home.
