Seasoned ground beef, creamy soup, melty cheese, and spicy tomatoes come together with crushed nacho cheese Doritos for a dish that’s easy to throw together and always a hit at the dinner table or potlucks. It’s hearty, indulgent, and full of nostalgic flavor.


Ingredients

1 lb ground beef
1 small onion, diced
1 packet taco seasoning
1 can (10 oz) diced tomatoes with green chilies (such as Rotel), undrained
1 can (10.5 oz) cream of mushroom soup
1 cup sour cream
2 cups shredded cheddar cheese, divided
1 bag (9.75 oz) nacho cheese Doritos, lightly crushed
Salt and pepper to taste
Fresh cilantro or green onions for garnish (optional)


Instructions

1️⃣ Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.

2️⃣ In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain excess grease.

3️⃣ Stir in the taco seasoning, diced tomatoes with green chilies, cream of mushroom soup, and sour cream. Mix well and simmer for 3 to 5 minutes to combine the flavors. Season with salt and pepper to taste.

4️⃣ Layer half of the crushed Doritos on the bottom of the prepared baking dish. Spoon the beef mixture evenly over the chips. Sprinkle 1 cup of shredded cheese over the top.

5️⃣ Add the remaining crushed Doritos and top with the rest of the cheese.

6️⃣ Bake uncovered for 20 to 25 minutes or until the cheese is melted and bubbly.

7️⃣ Let the casserole sit for 5 minutes before serving. Garnish with chopped cilantro or green onions if desired.

Notes

For extra spice, add chopped jalapeños or a dash of hot sauce to the beef mixture. You can swap out the cream of mushroom soup with cream of chicken or cheddar soup based on preference. If you want a crispier topping, reserve some extra Doritos to sprinkle on in the last 5 minutes of baking. This dish reheats well and is just as satisfying the next day.
