For the Roux:
- ½ cup vegetable oil
- ½ cup all-purpose flour
For the Gumbo:
- 1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)
- 1 lb smoked sausage, sliced
- 1 green bell pepper, diced
- 1 onion, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes (optional)
- 1 teaspoon Cajun seasoning (adjust to taste)
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon thyme
- 1 bay leaf
- 1 teaspoon hot sauce (optional)
- 1 cup okra, sliced (optional, for thickening)
- ½ cup green onions, chopped (for garnish)
- ¼ cup fresh parsley, chopped (for garnish)
- Cooked white rice, for serving
Instructions
1️⃣ Make the Roux:
- In a large pot or Dutch oven, heat vegetable oil over medium-low heat.
- Slowly whisk in flour, stirring constantly for 20-30 minutes until it turns a deep brown color (like chocolate). Be patient and keep stirring to prevent burning.
2️⃣ Sauté the Vegetables & Sausage:
- Add onion, bell pepper, and celery (the Cajun “Holy Trinity”) to the roux and sauté for 5 minutes until softened.
- Stir in garlic and cook for 30 seconds.
- Add sliced sausage and cook for 5 minutes, allowing it to brown slightly.
3️⃣ Add the Chicken & Seasonings:
- Stir in the chicken pieces and let them brown slightly.
- Add Cajun seasoning, paprika, black pepper, salt, thyme, bay leaf, and hot sauce.
4️⃣ Simmer the Gumbo:
- Pour in chicken broth and diced tomatoes (if using).
- Bring to a gentle boil, then reduce heat to low and let simmer uncovered for 45 minutes, stirring occasionally.
5️⃣ Add Okra & Adjust Seasoning:
- Stir in okra (if using) and let cook for another 15 minutes to help thicken the gumbo.
- Taste and adjust seasonings as needed.
6️⃣ Serve & Garnish:
- Remove the bay leaf.
- Serve hot over cooked white rice.
- Garnish with chopped green onions and fresh parsley.
