1 cup plain Greek yogurt (nonfat or full-fat, depending on preference)
1/4 cup creamy peanut butter (or almond butter for a variation)
2 tbsp honey (or maple syrup for a vegan option)
1/2 tsp vanilla extract
1/4 cup mini chocolate chips (plus extra for topping, optional)

For Coating:
1 cup dark chocolate chips (or semi-sweet chocolate chips)
1 tsp coconut oil (optional, for smoother melting)

Optional Toppings:
Crushed peanuts
Sea salt flakes
Shredded coconut


Instructions

Mix the Base: In a mixing bowl, combine the Greek yogurt, peanut butter, honey, and vanilla extract. Stir until smooth and fully combined. Fold in the mini chocolate chips, reserving a few for topping if desired.

Freeze the Bites: Line a baking sheet with parchment paper. Use a small cookie scoop or spoon to portion out the mixture into bite-sized balls (about 1 tablespoon each). Place them on the prepared baking sheet. Flatten each ball slightly into a disc shape for easier dipping later. Freeze the discs for 1–2 hours, or until firm.

Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips with the coconut oil (if using) in 30-second intervals, stirring between each interval until smooth. Alternatively, melt the chocolate using a double boiler on the stovetop.

Dip the Bites: Remove the frozen yogurt discs from the freezer. Using a fork or dipping tool, carefully dip each disc into the melted chocolate, coating it completely. Tap off any excess chocolate. Place the coated bites back on the parchment-lined baking sheet. Sprinkle with crushed peanuts, sea salt flakes, shredded coconut, or additional mini chocolate chips while the chocolate is still wet.

Freeze Again: Return the chocolate-coated bites to the freezer for 15–20 minutes, or until the chocolate hardens.

Store and Enjoy: Transfer the bites to an airtight container and store them in the freezer. Let them sit at room temperature for 2–3 minutes before enjoying for the perfect creamy texture.

Notes

These bites are customizable, so feel free to experiment with different nut butters, sweeteners, or toppings. If you prefer a smoother chocolate coating, the coconut oil will help the chocolate melt more evenly.
