Ingredients
- 1 lb (450 g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup (240 ml) beef broth
- 1 cup (240 ml) milk
- 3 tablespoons all-purpose flour
- 1 tablespoon butter
- 1 cup (165 g) frozen corn kernels, thawed
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon Worcestershire sauce
- ½ teaspoon black pepper
- 1 teaspoon mustard powder
- 2 cups (225 g) shredded cheddar cheese, divided
- 1 cup (180 g) long-grain white rice, uncooked
- Fresh parsley, chopped (optional, for garnish)
Instructions
1️⃣ Preheat & Brown the Beef:
Preheat oven to 350°F (175°C). In a large skillet over medium-high heat, cook ground beef, onion, and garlic until the beef is browned and the onion is soft. Drain excess grease.
2️⃣ Make the Sauce:
In the same skillet, melt butter over medium heat. Sprinkle in flour and stir constantly for 2 minutes to create a roux. Gradually whisk in beef broth and milk, bringing it to a simmer. Cook for 4-5 minutes, until the sauce thickens.
3️⃣ Season the Mixture:
Add onion powder, paprika, Worcestershire sauce, black pepper, and mustard powder. Stir well to combine.
4️⃣ Mix in Rice & Corn:
Stir in thawed corn and uncooked rice. Transfer everything to a lightly greased 9×13-inch (23×33 cm) baking dish.
5️⃣ Bake Covered:
Cover with foil and bake for 45 minutes, until the rice is tender and the mixture is bubbling.
6️⃣ Add Cheese & Bake Again:
Remove from oven, uncover, and stir in 1 cup of cheddar cheese until melted. Sprinkle the remaining 1 cup of cheese over the top. Return to the oven and bake uncovered for 10 more minutes, until the cheese is melted and golden.
7️⃣ Garnish & Serve:
Let cool slightly, garnish with fresh parsley, and serve warm! 🍽️
Notes
✅ Want a crunch? Add buttered breadcrumbs or crushed Ritz crackers on top before the final bake.
✅ Prefer a veggie boost? Stir in bell peppers, mushrooms, or peas for extra flavor.
✅ Rice Tip: Be sure to use long-grain white rice—instant rice will cook too quickly.
