French Onion Ground Beef and Rice Casserole

Ingredients

  • 2 medium onions, thinly sliced
  • 2 tablespoons butter
  • 2 cups cooked rice (white, brown, or wild rice work well)
  • 1 can (10.5 oz) French onion soup (store-bought or homemade)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken for a milder flavor)
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (optional, for a crispy topping)

Instructions

1️⃣ Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking dish or casserole pan.

2️⃣ Cook the Onions
Heat the butter in a large skillet over medium heat.
Add the sliced onions and cook for 10–15 minutes, stirring occasionally, until caramelized and golden brown. Remove from the skillet and set aside.

3️⃣ Brown the Ground Beef
In the same skillet, cook the ground beef over medium heat until browned and fully cooked. Drain any excess grease.
Season the beef with garlic powder and black pepper.

4️⃣ Combine the Ingredients
In a large mixing bowl, combine the cooked ground beef, caramelized onions, cooked rice, French onion soup, cream of mushroom soup, and sour cream.
Mix until well combined.

5️⃣ Assemble the Casserole
Transfer the mixture into the prepared baking dish.
Sprinkle the mozzarella cheese, Parmesan cheese, and breadcrumbs (if using) evenly over the top.

6️⃣ Bake
Bake in the preheated oven for 25–30 minutes, or until the casserole is bubbling and the top is golden brown.

7️⃣ Serve
Let the casserole rest for 5 minutes before serving.
Garnish with fresh parsley if desired, and serve hot with a side salad or crusty bread.

Notes

  • You can swap out cream of mushroom soup for cream of chicken for a lighter taste.
  • Use freshly grated cheese for the best melt and flavor.
