For the Creamy Parmesan Pasta:

  • 12 ounces pasta (fettuccine, linguine, or penne)
  • Water for boiling
  • 1 teaspoon salt (for pasta water)
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1 ½ cups heavy cream (or half-and-half for a lighter version)
  • ¾ cup grated Parmesan cheese
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional)
  • Salt to taste

For Garnish:

  • Fresh parsley, chopped
  • Extra Parmesan cheese

Instructions

Start by cooking the pasta. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water to adjust the sauce consistency later.

In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook for 4–6 minutes, stirring occasionally, until browned and cooked through. Remove the sausage from the skillet and set aside.

In the same skillet, melt butter and add minced garlic and red pepper flakes (if using). Sauté for 1–2 minutes until fragrant. Return the cooked sausage bites to the skillet, tossing them in the garlic butter mixture. Set aside while preparing the sauce.

In a separate large skillet or saucepan, melt butter over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant. Pour in the heavy cream and bring it to a gentle simmer, allowing it to cook for 3–4 minutes to slightly thicken. Stir in the Parmesan cheese, black pepper, and nutmeg (if using). Mix until smooth and creamy, adjusting the seasoning with salt if needed.

Add the cooked pasta to the sauce, tossing to coat evenly. If the sauce is too thick, gradually add small amounts of the reserved pasta water until the desired consistency is reached.

Serve the creamy Parmesan pasta in bowls or plates, topping each portion with the garlic butter sausage bites. Garnish with chopped parsley and an extra sprinkle of Parmesan cheese.

  • For extra depth of flavor, use a mix of Italian sausage varieties such as mild and spicy.
