  • ⅓ cup chopped white onions
  • 1 teaspoon minced garlic
  • 3 tablespoons taco seasoning
  • 2 quarts beef stock or broth
  • 2 cups frozen corn
  • 1 can (15.5 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) petite diced tomatoes, drained
  • 1 cup tomato purée
  • 2 teaspoons lime juice
  • 2 teaspoons salt
  • 1 cup uncooked white or brown rice
  • 1 tablespoon fresh cilantro, snipped

  • Lime wedges
  • Extra cilantro
  • Tortilla chips

Instructions

1️⃣ Brown the beef: In a large Dutch oven or soup pot, brown the ground beef with the chopped onions and minced garlic over medium-high heat, breaking the meat into crumbles as it cooks. Once fully cooked, drain off any excess fat.

2️⃣ Add taco seasoning: Stir in the taco seasoning, making sure the beef is evenly coated.

3️⃣ Add remaining ingredients:

  • Pour in the beef stock, frozen corn, rinsed black beans, diced tomatoes, tomato purée, lime juice, salt, and uncooked rice. Stir everything together to combine.

4️⃣ Cook the soup:

  • Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the rice is tender.

5️⃣ Add cilantro: Stir in the freshly snipped cilantro right before serving for a fresh burst of flavor.

6️⃣ Serve: Ladle the soup into bowls and top with your favorite toppings like shredded cheese, a dollop of sour cream, lime wedges, extra cilantro, and a side of crunchy tortilla chips.

Notes
