These peach cobbler egg rolls combine the classic flavors of warm, spiced peaches with creamy cheesecake filling, all wrapped in a crispy, golden shell. Rolled in cinnamon sugar while still hot, they’re an irresistible treat perfect for dessert or a sweet snack.
Ingredients
2 cups peaches, peeled and diced
1 tablespoon butter
1 tablespoon brown sugar
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 tablespoon cornstarch (optional)
1 tablespoon water (if using cornstarch)
8 oz cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
10 egg roll wrappers
Vegetable oil for frying
1/4 cup cinnamon sugar (3 tablespoons sugar plus 1 tablespoon cinnamon)
Instructions
Melt the butter in a skillet over medium heat. Add the diced peaches, brown sugar, cinnamon, and vanilla extract. Cook for 5 to 7 minutes, stirring occasionally, until the peaches are soft and juicy.
If using cornstarch to thicken, mix the cornstarch with water until smooth. Stir this mixture into the peaches and cook for an additional 1 to 2 minutes until the filling thickens. Remove from heat and let the peach mixture cool completely.
In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
Place one egg roll wrapper on a clean surface with a corner facing you, like a diamond shape. Spoon about 1 tablespoon of the cheesecake mixture and 1 tablespoon of the cooled peach filling into the center.
Fold the bottom corner up over the filling, then fold in the sides, and roll up tightly. Moisten the top corner with a bit of water to seal the roll. Repeat with the remaining wrappers and filling.
Heat vegetable oil in a deep skillet or fryer to 350°F. Fry the egg rolls in batches for 2 to 3 minutes, turning occasionally, until they are golden brown and crispy. Remove and drain on paper towels.
While the egg rolls are still hot, roll them in the cinnamon sugar mixture to coat evenly.
Notes
For best results, allow the peach filling to cool completely before assembling to prevent the wrappers from becoming soggy. These are best served warm but can be reheated in an oven or air fryer to restore their crispiness. You can substitute canned peaches if fresh peaches are not in season, but be sure to drain them well to avoid excess moisture.
