These no-bake pecan pie balls are a bite-sized version of the classic pecan pie. With a rich, nutty flavor and a touch of sweetness, they are perfect for holiday treats or anytime you need a quick and easy dessert.
Ingredients
- 2 cups pecans, finely chopped
- 1 cup graham cracker crumbs
- 1/2 cup brown sugar, packed
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup powdered sugar (for coating, optional)
Instructions
Toast the Pecans (Optional)
If desired, toast the pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Let them cool completely before using.
Mix the Dough
In a large bowl, combine the chopped pecans, graham cracker crumbs, and brown sugar. Stir until evenly mixed. Add the corn syrup, vanilla extract, and salt to the dry ingredients. Mix well until a sticky dough forms.
Shape the Balls
Scoop about 1 tablespoon of the mixture and roll it into a ball between your hands. Repeat until all the dough is used, placing the balls on a parchment-lined baking sheet.
Coat (Optional)
Roll the balls in powdered sugar for a sweet coating, if desired. Alternatively, drizzle with melted chocolate or dip them entirely for a more decadent treat.
Chill
Refrigerate the pecan pie balls for at least 1 hour to firm up before serving.
