Ingredients
- 1 lb ground chicken
- 1 cup breadcrumbs
- 1 egg
- ¼ cup green onions, chopped
- ½ cup pineapple juice
- 2 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp grated ginger
- ½ cup teriyaki sauce
- 1 cup pineapple, chopped
- Salt & pepper to taste
Instructions
1️⃣ Preheat oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2️⃣ Prepare meatball mixture: In a large bowl, combine ground chicken, breadcrumbs, egg, green onions, pineapple juice, soy sauce, garlic powder, ginger, salt, and pepper. Mix until well incorporated.
3️⃣ Form meatballs: Shape the mixture into small meatballs and place them evenly on the prepared baking sheet.
4️⃣ Bake: Cook in the oven for 20-25 minutes, or until the meatballs are fully cooked and golden brown.
5️⃣ Make the sauce: In a large skillet over medium heat, warm the teriyaki sauce. Add the baked meatballs and chopped pineapple, tossing to coat. Let simmer for 5 minutes, allowing the sauce to thicken.
6️⃣ Serve & enjoy! Garnish with extra green onions and serve hot over rice, noodles, or as an appetizer.
Notes
✔️ Extra juicy meatballs: Don’t overmix the meat; gently combine ingredients for tender meatballs.
✔️ Want a thicker sauce? Stir in 1 tsp cornstarch + 2 tbsp water to the teriyaki sauce.
✔️ Pair it up: Serve with steamed rice, stir-fried veggies, or lettuce wraps for a lighter option.
