Description

These crispy, cheesy Mexican corn bites are packed with bold flavors, featuring sweet corn, spicy jalapeño, and creamy cheese. They make the perfect appetizer or snack, served with lime wedges and a smoky chipotle dipping sauce.

For the Corn Mixture:

  • 1 cup corn kernels (fresh, frozen, or canned; if frozen, thaw first)
  • 1/2 cup shredded Monterey Jack cheese (or your favorite melting cheese)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 jalapeño, finely diced (optional, for heat)
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and black pepper, to taste
  • 2 tablespoons fresh cilantro, chopped

For the Breading:

  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs (or regular breadcrumbs)
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder

For Frying:

  • Vegetable oil, for frying

For Serving:

  • Fresh lime wedges
  • Chopped cilantro
  • Hot sauce or creamy chipotle dipping sauce (optional)

Instructions

Prepare the Corn Mixture
In a large bowl, mix the corn kernels, Monterey Jack cheese, Parmesan cheese, mayonnaise, sour cream, jalapeño, chili powder, cumin, cilantro, salt, and pepper.
Form small balls using about 1 tablespoon of the mixture for each bite. Place on a parchment-lined tray and freeze for 20–30 minutes to firm up.

Prepare the Breading Station
Set up three shallow bowls:

Bowl 1: All-purpose flour.

Bowl 2: Beaten eggs.

Bowl 3: Panko breadcrumbs mixed with paprika and garlic powder.
Remove the frozen corn balls from the freezer. Roll each ball in flour, then dip in the egg, and coat thoroughly in the breadcrumb mixture.

Fry the Corn Bites
Heat vegetable oil in a deep skillet or saucepan over medium-high heat until it reaches 350°F (175°C).
Fry the corn bites in small batches for 2–3 minutes, or until golden brown and crispy.
Use a slotted spoon to remove the bites and drain on paper towels.

Serve
Arrange the spicy corn bites on a serving plate. Garnish with chopped cilantro and serve with lime wedges and your favorite dipping sauce.

Notes

  • Baking Option: If you prefer a healthier version, bake the corn bites at 400°F (200°C) for 15–18 minutes, flipping halfway through.
  • Air Fryer Method: Air fry at 375°F (190°C) for 10–12 minutes until crispy.
  • Dipping Sauce Ideas: Serve with chipotle mayo, sour cream mixed with lime juice, or a tangy salsa verde.
