Description
Texas Tornado Cake is an old-fashioned Southern dessert that’s incredibly moist, sweet, and simple to make. It’s loaded with crushed pineapple and chopped nuts, then topped with a warm buttery coconut glaze that soaks right into the cake. No frosting needed. It’s rustic, rich, and perfect for potlucks, family gatherings, or any time you want a no-fuss dessert with big flavor.
Ingredients
For the cake:
2 cups all-purpose flour
1½ cups granulated sugar
2 eggs
1 teaspoon baking soda
1 can (20 oz) crushed pineapple with juice
1 cup chopped pecans or walnuts
1 teaspoon vanilla extract
Pinch of salt
For the glaze:
1 cup granulated sugar
½ cup unsalted butter
¾ cup evaporated milk
1 teaspoon vanilla extract
1 cup sweetened shredded coconut
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish
In a large bowl, combine the flour, sugar, eggs, baking soda, crushed pineapple with its juice, vanilla extract, salt, and nuts. Mix until fully incorporated but do not overmix
Pour the batter into the prepared baking dish and spread it evenly
Bake for 35 to 40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean
While the cake is baking, prepare the glaze by combining sugar, butter, and evaporated milk in a saucepan over medium heat. Bring to a gentle boil and cook for 2 to 3 minutes, stirring constantly. Remove from heat and stir in vanilla and shredded coconut
Immediately after the cake comes out of the oven, pour the hot glaze evenly over the top. Allow it to soak in as the cake cools slightly
Serve warm or at room temperature. This cake is best enjoyed on the day it’s made, but it also stores well and stays moist for several days
Notes
Texas Tornado Cake is naturally moist due to the pineapple and needs no additional oil or butter in the batter. For extra texture, you can toast the nuts or coconut before adding them. This cake does not require frosting and travels well, making it great for sharing. If you prefer a less sweet version, reduce the sugar in either the batter or the glaze slightly without affecting the texture.
