Heat 1 tbsp olive oil in a skillet. Season the chicken with salt, pepper, and garlic powder, then sear until a deep golden-brown crust forms. Remove the chicken from the pan.
In the same skillet, sauté zucchini slices for 2 minutes until they just begin to look semi-translucent.
Place the chicken and zucchini in a square ceramic dish. Top with mozzarella and nestle cherry tomatoes into the cheese.
Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until the cheese has developed toasted golden brown patches and the tomato skins are blistered.
Dust with dried oregano and finish with a heavy layer of fresh chopped parsley.
