Description
This no-knead bread recipe is a game changer for home bakers—simple ingredients, no special tools, and minimal effort yield a crusty, artisan-style loaf with a chewy interior and golden crust. Perfect for beginners or anyone craving fresh, homemade bread without the fuss.
Ingredients
3 cups (360g) all-purpose flour or bread flour
1 ½ tsp salt
½ tsp instant yeast or active dry yeast
1 ½ cups (360ml) warm water (around 100°F / 38°C)
Optional: 1 tbsp honey or sugar for a hint of sweetness
Instructions
1️⃣ In a large mixing bowl, combine the flour, salt, and yeast. Add the warm water and mix until a shaggy, sticky dough forms. Ensure there is no dry flour left, but do not knead.
2️⃣ Cover the bowl tightly with plastic wrap or a clean damp towel. Let the dough rest at room temperature for 12 to 18 hours, until it is bubbly and has expanded significantly.
3️⃣ Lightly flour your hands and work surface. Turn the dough out and gently shape it into a round loaf, being careful not to deflate the bubbles too much. Place the shaped dough on a piece of parchment paper. Cover it loosely and let it rest for 30 minutes.
4️⃣ While the dough is resting, preheat your oven to 450°F (230°C). Place a Dutch oven or heavy lidded pot inside to preheat. When ready, carefully transfer the dough along with the parchment paper into the hot Dutch oven. Cover and bake for 30 minutes, then remove the lid and bake an additional 10 to 15 minutes, or until the crust is deeply golden and crisp.
5️⃣ Remove the bread from the pot and let it cool on a wire rack for at least 1 hour before slicing. This allows the crumb to set and enhances flavor and texture.
Notes
This bread can be customized with add-ins like herbs, seeds, or chopped nuts for extra flavor. The long fermentation time builds complex flavor and structure without kneading. If using active dry yeast, you can dissolve it in the warm water first before adding to the flour. Store leftovers in a paper bag or wrapped in a clean towel for best texture.
